Very Vegan Potato Salad


12 medium potatoes: peeled, cubed and boiled for 15 minutes in water. You can add sea salt to the water if you desire.

1-2 cucumbers chopped

1/2 bunch green onions chopped

2 cups fresh or frozen corn kernels

1/2 cup chopped red bell pepper

1/4 cup red onion minced

2-3 cloves garlic minced

1-3 tablespoons apple cider vinegar (add to taste)

1 1/2 cups vegenaise or almonnaise

2 teaspoons sea salt (add to taste)

2 teaspoons cayenne pepper powdered (add to taste)

* Organic produce is always best!

How to create:

First prepare potatoes. Meanwhile chop other vegetables and place them in a large mixing bowl. Then in a separate smaller mixing bowl prepare dressing by mixing red onion, garlic, apple cider vinegar and vegenaise. After potatoes have cooled , add them to the other vegetables and stir in the dressing. Add sea salt and cayenne to taste! You can either stick it in the fridge for a few hours to chill or enjoy it right away:)
